Cover spearmint with vodka
2 cups fresh, washed, dried mint
2-3 cups vodka
Leave in glass jar, out of direct sunlight for 3-5 days, shaking gently at least daily
Use 80 proof vodka, for more versatile results
Strain mint from vodka, using cheesecloth or coffee filter
Pour into glass bottle or jar, cap or seal
Store out of direct sunlight
Use for flavoring drinks, or a little for indigestion.
Great after dinner drink, especially if you've served spicy or rich foods
